I recently flashed a custom ROM and had the Gapps flashed after, and it had the older Play apps which i prefer over that crappy Fisher-Price UI they have now. unfortunately, as i was trying to find 'Market Updater' in ROM Toolbox (which wasn't listed) to freeze it, the apps updated and i'm back to Fisher-Price land. i can uninstall updates and they revert back, but immediately change to the new UI again a few minutes later. i cannot seem to find any way to stop them from auto-updating. is there another way? i can turn off Auto Update for apps, but it does not keep Play and the Google Apps like the Play Store from auto-updating on their own. the next launch, it's back to the WebOS look again.
In Gingerbread, you could simply freeze or remove 'Market Updater' and you kept the older Play Store. unfortunately that seems to have been removed in Android 4.x+
