Rooting a 7 year old (NOS) Elonex OneX notebook

Hello all, looking for some help, guidance, and advice!

I've been given an (unused) Elonex OneX mini notebook which probably qualifies for antique status at this stage.

Model number on base: CEWS7-7BLK

It's a cute little thing that I would have use for as a terminal etc., it also has some useful I/O (2xUSB, ethernet, HDMI, audio, SDHC, and WiFi).

It has a terminal app installed but I can't do anything useful as I don't have SU, obviously.

Can't connect to the Google Play store as the browser is so old, therefore can't install any apps over the 'net.

Obviously it would be best practice to make a backup (although if this thing bricks I won't have lost anything), how do I achieve that? I've read through the various guides on this site but they all appear to be predicated on the assumption that the device to be rooted can install an .apk from a live online source.
