you can remove apps and bloatware and free up some space on the device. also there are some apps out there that can use root permissions to set voltage and stuff like that. (setcpu)
Just keep in mind that system apps (i.e. bloatware) are tied to the phone's critical system files: one wrong deletion and the phone becomes an expensive paperweight. Such is the power of root. If ClockworkMod or TWRP Recovery is available for your device, make sure it's flashed before deleting things.
Then learn all about something called a nandroid backup: which is a snapshot image of the phone's known good state saved to user memory. If you DO delete something and "brick" the phone, you can always go back into Recovery, wipe the phone and restore the backup... it will be like nothing ever happened. Deleting system files without a backup is like walking a tightrope over a volcano without a safety net
