Root Rooting

So I got a old S3 laying around. My main phone broke so I'm using this until I can get it fixed. I was wondering what is the chance that if I root and install lollipop on it that I will brick it? I want to install a lollipop ROM, but because its my main phone right now I don't want to brick it. Also, if I want to can I uninstall the ROM and un-root? Or is it stuck rooted permanently? Thanks in advance!
 
A lot depends on the model number of the phone. Easiest way to Unroot would be to reflash the stock firmware if available. Most are except for AT&T i747. Lots of 5.1 Roms available for the S3 and root method usually is to flash a custom recovery with Odin then use the recovery to flash SuperSU zip. Custom recovery also lets you make a backup of your stock ROM so you can reinstall it if something goes wrong. Backups are your best friend.
