Saint Patrick's Day

The holiday is Tuesday the 17th. As DNA results change over time, I'm less Irish and more Scottish as time goes by. I don't feel a bit less Irish and plan to celebrate as I have all of my life. I will be enjoying my corned beef and cabbage for dinner and will likely lift my mug a few times.

I hope you have some fun Paddy day plans that include something good to eat and drink.

Being from Massachusetts, my wife (and her family) call it a "boiled New England dinner."
I like the meal, but man, I wish I could figure out how to get the meat really tender. Seems to be hit-or-miss for us, and most often a miss.
My wife will be cooking it tonight, so she said, but I think she's getting a really late start.

Oh, and it's March 14th, so happy Pi Day, everyone. :)
 
We low and slow crockpot our corned beef. It is important to slice the brisket across the grain. I can almost smell it cooking now. :)

I love smoked brisket and tried smoking a corned beef brisket just once. It was a miserable fail. I've not tried it again but it needs to be in a pan with water and the fats that cook out of the brisket to be decent.

smoking a brisket needs slow and low, and a basting in the stuff that melts out of it periodically

the water can be in a pan in the smoker

just incredible

salmon is also delectible when properly smoked
