A couple of months ago Samsung released their new camera app, Expert RAW, on the South Korean Google Play Store for the S21 Ultra 5G. This video shows its capabilities...
If you would like to try it you can download the latest .apk file, Samsung Expert RAW Camera App 1.0.00.21.apk (46M), and install it on your Samsung Galaxy S21 Ultra 5G by downloading the file from here...

Simply click on the downloaded .apk file to install the app.
I have not had a chance to test it out fully on my international S21 Ultra device yet but it looks promising.
