Samsung Galaxy S

Hi people - I have just got the new Samsung Galaxy S phone, which after using Nokia N97 is a brilliant phone. My main issue is that it doesn't have standard phone profiles yet the function manual I downloaded from the Samsung site clearly says it does? Any ideas? Not a major issue but I guess I just got used to having profiles. Secondly, is there a way to sort the photos in the gallery into different folders? For example in months or tags?

Any help would be greatly received

There are also various apps you can download in order to sort your files into folders if the stock file organiser is not enough for you.
