Settings menu background

I can't really believe I'm asking this but I feel like I'm just going round in circles!

A while ago I picked a completely unsuitable background which I applied to everything. I changed it pretty quickly because I couldn't read any text but for some reason it has remained the background to my settings menu only.

This makes every single menu option illegible!

I've changed the background to my lock screen and home screen multiple times since then with no issue but the settings background always remains the same.

I use Microsoft Launcher personally, but have gone back to Samsung's UI briefly today to see if it makes any difference and it doesn't.

Sounds like the launcher has a bug, I would reinstate that launcher and set a new background how you did originally to see if it clears the issue.

If not you could try to reset the launcher settings back to default or maybe delete the app altogether to clear the background from your device. That way I would think android would default the background back to how it was. You could also try and locate the offending background image and deleting it.
 
It doesn't sound like the launcher settings but the system settings (otherwise changing launcher should fix it). I don't have one of these phones but I'd look at whatever theming options it has. I thought the default system settings have a white background on Samsungs, but I could imagine that theming might let you change this, which is why I suggest looking there.
