I noticed that the Canvas has internal shared storage. It's sharing it with what, and why? Could it be the SD card, even though it's formatted as normal portable? I also noticed that even after I switch photos and videos supposedly to the card, more and more "internal" storage seems to get eaten up somehow.

It is sharing storage with your operating system and Apps.
No effect on performance, nothing to do with the real SD card, nothing to "improve".
Since android 4 the normal setup is for the internal storage to be shared between apps and user files. That's "shared" as in "can be used for either" rather than the older arrangement of separate, inflexible partitions for each (which some budget Chinese devices persisted with, despite this having no advantages and only drawbacks).
