Root [Sprint/Cricket] Rom/Kernel Suggestions

Ok, I use to have a LG Optimus M back in MetroPCS about 2 years ago I had it rooted had flashed ROM's before and then moved on to Sprint and got the iPhone 4S. I found someone selling a Samsung GS3 for a good deal and kind of miss android so I have it now fully activated and rooted and have TWRP Custom Recovery :D I'm running on build MD4 and android 4.1.2. Now I have missed a lot of things that have happened and would like advice. I want to OC and UC my phone whenever I please and have found like 3 different kernels for this variant of gs3. I would like to know what an insecure kernel is and advantages/disadvantages since that is one of the kernels I saw I checked all around and can't find an answer. I would like a simple kernel that has a little bit of wiggle room to add new things (I'd like to put a boot animation and maybe other things) also I'd like a ROM that would be stable and normally updated but that wouldn't make me lose my S Beam and other features (according to what I've read I'd be looking for something in the TouchWiz category rather than AOSP, which I would've wanted maybe CM or I've read a lot about liquidsmooth). So I'd kind of would like to see what people are running on their phones, their experiences with any ROM or kernels flashed and hopefully good answers and advice on what should I flash onto my phone

Personal favorites:

Roms:
1) Touchwiz based:
-The Peoples ROM
-MOAR (mother of all ROMS)

2) AOSP Based
-Liquid Smooth
-CM10.1

Kernels:
1) Touchwiz
-Anthrax (private distribution, http://anthrax-kernels.us/forum/forum.php) You have to be a member to get it so chances are probably don't have access if you've been out of the android scene
-Ktoonsez

2) AOSP
-BMS

@Rxpert83 how would I be able to get Anthrax? would I have to register?

Youd have to register, and theres an approval process as well. They've had a lot of issues over there so they've locked it down like fort knox

Its not something you'd be able to get right away

and ktoonsez shows up as a AOSP kernel according to the Guide

I believe he makes both, but BMS is my go-to on aosp roms
