There are basically 2 different ways to stop the update notification, without actually updating.
  • Long press update notification
  • Tap app info
  • Uncheck "show notifications"
Or
  • Open up Settings>Apps>All tab>
  • Scroll to Google Play Services
  • Uncheck "show notifications"

I SECOND THIS ^

So, if we uncheck "show notifications" because we keep getting update notifications even though we've already updated, what happens the next time there is an "real" update?

We probably will NOT get another "real" update ever. The chances of an official LG update to lollipop are extremely slim. Plus if we do it will be mentioned here in the forum. You can re-check it if we do ever get an update.
Just to note, those notifications after you updated, are most likely carrier updates (which is the garbage bloatware we try to eliminate from our devices).

Try it or just don't worry about it because most likely you would get word of the update via another route of information on a new update before you have it tell you theres an update available for your device..

All in all I'll say this that I keep my notifications turned on because I miss notifications even when they're on.

Haha peace out
