It would be useful to know what device and Android version you are running. Regardless, I know of no stock launcher that allows hiding or disabling the status bar. Check your launcher settings; I bet it's either a toggle or activated by a gesture (e.g., swipe up. 2-finger swipe down, or similar). I know that ADW EX, Apex, Holo, and SPB Shell all have this capability.
