Ok, so if you've been following along with me 'til now, you've rooted your Intercept and installed SlapKernel, and are no longer locked in a daily death-struggle with your phone.
If you're with me so far, I bring you Wireless Tether for Root Users. Yes, it's not a very snappy name, but the program works.
Here's whatcha do:
1. Verify you're rooted & have SlapKernel
2. Download from Market & install
3. ???
4. Profit!

Just make sure you turn your wifi on (durrrr) before you activate the tether app. The wirelessness makes it A LOT more convenient to use on the fly, as it doesn't require you to install the Intercept USB drivers before you can tether. You can even name your SSID! (Mine is LCARSnetwork)
