Help System Update Problem

I received a message this morning that there was a system update for my Samsung Galaxy SII Epic 4G Touch. I ran the update and it appeared to install fine. When the phone rebooted and came to my homescreen all of my apps were gone. Nothing was visible on my homescreen except my background image. When I hit Applications in the bottom corner of the screen that folder too was blank. Any suggestions on what to do?? I tried taking out the battery but no luck. I really don't want to do a full factory reset.
 
I don't recall ever changing an Encryption setting so I was probably doing whatever the factory setting was for that. Can you tell me where I can check to see what it is set at now?
 
So when you go to menu/settings all of the settings folders are still there? Have you checked out the display and or application folders to see if anything changed in there?
 
If I go to menu/settings all of my folders are still there. Nothing appears to have changed in either the Display or Applications folder (or any other folder that I can tell). If I click on Applications/Manage Applications all of them are still present there. But they just are not present on my homescreen or in the shortcut to the applications folder that is on the homescreen.
 
Just to fill in anybody that is interested, I plugged my phone into my computer so I could transfer over all my pictures, videos, etc in case Sprint decided to do a factory reset. When I unplugged the phone it was back to normal with all of my App icons in the correct spot. I have no clue what plugging it in to my computer did?? But this might help if someone else has the same problem.
