Text encryption

I would like to know from people who make an effort to encrypt text, which cipher and mode would you prefer if you were looking? Something legacy, something new?

Which suggests tree encryption/decryption apps. All support AES256 with various keylengths. My favourite is Zencrypt which supports random salting and a choice of encryption algorithms, Plus it's open source (which is always a plus for security related apps.)
