I have the my touch and ive had different themes, but im looking fort something with more widgets, or just cooler looking themes please help. And if you know of a superman theme please let me know.

The best themes are the ones you make yourself. Don't be afraid to get creative; combine a new home replacement launcher, a themed ROM, some icon packs and a nice wallpaper and you'll be surprised at how much customization you have at your grasp.

Oh and beware the root monkies, there's always one in every post.

That was a legitimate answer to his question. Root access allows you to theme the actual OS, rather than using a home replacement app to apply an overlay and slow down your phone.

I understand that not everyone wants to, or can, root their phone, but that doesn't make my answer any less valid.

How difficult is it to theme a rooted phone? I've always figured theming the base OS would be more of a command line type thing than being GUI based. Do you require a basic knowledge of Java or what? Pandahome, for example, offer a really simple webapp for designing themes for their app. This is considerably easier to use than staring at lines of text (for average Luddite like myself).

I'd have to disagree on that one. I find Launcher Pro to be faster than either of the stock homes. As long as the replacement app is set to launch (and you don't launch your other home at the same time), you may end up with a much snappier home replacement.

Rooting isn't exactly what I call UI customization (some elements, yes), but more of an optimization and feature enhancer. It has better dialers and what not, but it's not like you get a rooted ROM and bang, you have your perfect interface (at least IMHO). Also, I wouldn't go through the trouble of becoming a dev to tweak a UI... I think you'd find the months you put into it to be far less rewarding then what you got out of it.

As a matter of fact, I'm running IC3 ROM (which granted, replaces the dialer with a nicer one [root only can do this]) with Launcher Pro...
