Transfering Contacts to New Phone

Just wondering how the carriers or like Best Buy...when they advertise that they can transfer all my current data and contacts to a new phone works? Do they have special software that works on all models of phones or do they just sit there for a few hours typing away?

we use a machine called cellebrite to transfer contacts
