correct me if I'm mistaken but isn't that just using VNC to remote access an ubuntu desktop and not the same as ubuntu actually installed on the phone?

Yes. They using VNC, not mean installed Ubuntu into the Nexus One.

He is connecting the VNC to his localhost ie. Ubuntu installed on the phone itself.
