UK to USA - good plan to use data/calls/text?

Hi, I'm going to Orlando in August with my family and would like to take my phone with me (currently HTC Desire but should be a Galaxy Note by then if all goes to plan). I don't want to have to worry about data roaming charges so thought I'd buy a U.S. sim but have got a bit confused by the options. What I would like is to have access to the internet for weather forecasts, queue ride times emails and general browsing during the day. We will have wifi at the villa. I also need to be able to contact my oh and kids when we split up in the parks, although I have yet to sort out what they are going to use.
I have found that T-Mobile do $30 and $50 plans which seem to suit my needs. I'm not sure if you can get this rate for the 21 days I need it for or whether it's an ongoing monthly plan. Please can anyone tell me exactly how this works? Would I need to find a T-Mobile shop and buy a sim and would they then set it up for me?
I have posted on this forum as I had heard about the T-Mobile deal but are there any other alternatives I should be considering? Thanks for any help.
 
Yeah just go to a T-Mobile stores once you get here and you can just pay $50 or $30 depending on which plan you want and they'll give you the sim card. I believe its good for 30 days.
 
Should be that simple as long as your phone is unlocked. I'm not sure how it works in the UK (if the carriers sim-lock the phones).
