Open contact to be separated.
Tap Edit (pencil top right)
Tap Menu (3 dots top right)
Tap Separate
The Separate option is not there if the contact is not joined to another contact.

Depends on the phone and the contact app exactly. The contacts app on Samsungs would be different from the one on HTC, but they have similar methods.
