Looking to restore my rooted tab to stock ICS. Will flashing stock ICS via Odin unroot the tablet?

Hi wrench.
Yes, it will.
After flashing, some also recommend doing a wipe data/factory reset, and then wipe partition.
The author of the guide I follwed strongly recommended doing those wipes three times.
That's how I did it.
But I'm back to being rooted. I had tried an app that was supposed to increase screen touch sensitivity. Didn't do anything, so I uninstalled it.
I noticed an issue with my tab's screen taking just a bit longer to focus when zooming than I was used to seeing. Not drastic, but just didn't seem right. Only thing I could think of was that app I tried. So I flashed the stock rom again, did the recommended wipes three times, and then rooted. Back to normal ( which means terrific ).

I flashed stock ICS via Odin and when the Tab rebooted, nothing changed - it still had my old setup with all my data.

WTH?

Hmmm, this did eliminate root, so it definitely flashed. Strange that it didn't eliminate data. I will just do factory reset from within the device menu.

I'm guessing the data and settings and apps all came back because I have Google set to backup and auto-restore.

If you ran the update file via Odin then it doesn't wipe the memory, it simply replaces the system firmware and bootloader so all your data, settings, and apps will remain. A factory reset will wipe the tablet clean and reset the firmware to stock ICS configuration. It'll probably look a fair bit different from your current setup.

I always recommend a reset before AND after a major OS version update to clear the memory and setup the system cleanly. It tends to eliminate most issues related to old data and cache interfering with the new firmware system. Have fun with the new setup.
