How do I sign out of my gmail account and/or keep mail from being pushed through to my phone?

So do you mean sign out of the Google account on your phone but still keep the Gmail coming through? Or do you want to sign out of your account to switch to another or what?

I guess what I'm asking for is a way to keep my email from being so easily accessable by anyone who happens to pick up my phone. Sync/unsync under settings works for now but is there a better way?
