Update to Lollipop 5.1

Hey guys, so I am in sort of a bind here and need some help. I have spent hours trying to research different ways of accomplishing / fixing this.

What I want to do:
Update my Motorola Moto X XT1060 (ROOTED) to Lollipop 5.1 and regain ROOT access at some point.

What I've done:
1. I tried to download the firmware and install it via the recovery mode in fastboot but it won't get passed the verifying update package and aborts.
2. I therefore unrooted completely using the unroot option in SuperSU and tried again with no luck
3. I also tried the OTA update but get this error message every time "com.motorola.vzw.settings.extensions has stopped".

So now I have an unrooted phone (which I would like root back) that I still can not update to 5.1

Any advice on how to accomplish this would be greatly appreciated.

UPDATE:
I found out that this was a two part update and I only had one of them and the incorrect version (asia?) at that. I now have both parts of the correct version but still can't update. When I try to run the update it gives me this error:

"Package expects build fingerprint of motorola/ghost_verizon/ghost:4.4.4/KXA21.12-L1.26-3/3:user/release-keys OR motorola/ghost_verizon/ghost:4.4.4/KXA21.12-L1.26-4/7:user/release-keys; this device has motorola/ghost_verizon/ghost:4.4/13.11.1Q2.X-69-3/5:us
Installation aborted"

Does this just mean that I can't uprade to 5.1 from 4.4 and need to have 4.4.4 installed first?

UPDATE 2:
After back tracking with OTA update files I got a new message when trying to install 4.4.2 which now errors:

"/system/app/3c_main.apk has unexpected contents"

Any suggestions?

Is your bootloader unlocked? It really doesn't matter if it is or not as mine is unlocked and i have the same exact phone, the developer edition version. It would matter as far as regaining root though. When you're trying to update is the stock recovery there or are you using a custom recovery Twrp/Cwm? if you have the stock recovery then doing the update to 4.4.4 won't hurt anything i upgraded to 4.4.4 with root and no issues.

The way i prefer to do things is to use Mfastboot to flash the stock firmware while the device is in fastboot. This may or may not be the easy way for you, not sure kinda hard to tell via a message on the forum. If not use the Verizon software upgrade assistant. It will wipe root but no worries if you have a unlocked bootloader. Since you have 4.4 it may take a few runs of that tool to get to 5.1 as it will probably install 4.4.4 then the small update after that then 5.1

Once you're on 5.1 as you desire, fastboot flash the custom recovery of your choice, then since you will have 5.1 don't reboot the device after flashing the recovery as it will wipe the recovery you flashed. Just boot straight into the recovery and sideload SuperSU or put the SuperSU zip in the internal storage prior to flashing the recovery whichever is easier for you.
Then you will have root and 5.1 If you have a unlocked bootloader you will get the ugly bootloader is unlocked message and can just flash the logo.bin that is current to the firmware to rid yourself of that message.

If you need further help, i do check this site for alerts on posts i have made and can walk you through this as well as other members on the forum.
