When you get a message about an update is there anyway of finding out before hand what they are updating or who is doing the update Samsung or Verizon.

And also after finding out there is around 40 different versions of the Samsung Galaxy S5 is that true for all Samsung phones?

I would check the Samsung and/or Verizon website about your device updates before you install updates.
They should/would have information on the updates/upgrades.

If you have the Verizon G900V model, it will be Verizon's own version of Samsung's firmware that they are forcing on you OTA. See #1.6 of 40 Galaxy S5 models - Dummies Guide.

Latest one is build #OE1 which is the same changelist # as the aborted OD5. See, Verizon 900V firmware OE1 now available OTA

Neither Samsung or Verizon release actual changelog details.
