Using Outlook for contact management

I just got a new Pixel XL after moving from using iPhones for the past many years. So far I'm enjoying the switch!

I use Outlook.com as my email provider and the Outlook 2016 client on my computer. (I have an old Gmail account that I pull everything to the Outlook account from).

I want to use Outlook as my contacts source for everything on the Pixel. How can I do this? In the Contacts app it lists my Gmail and Outlook accounts in the accounts section and going into each individually shows the contacts from that service. But if I try to hide the Gmail contacts (Settings -> Contacts to display -> Custom) then the Contacts tab shows nothing and says my contact list is blank.

If I try to remove the Gmail contacts entirely (Settings -> Accounts -> Google) I get a bunch of warnings about desyncing my Google account from the phone entirely. I have turned Contact syncing off but that did nothing.

So how can I:
1) Remove the Gmail contacts from the phone
2) Get the Outlook contacts to appear in the Contacts tab.
3) Make sure everything stays sync'd between Outlook.com <-> Outlook client <-> Pixel.

If anyone thinks I'm crazy for wanting to use Outlook for contacts I'm also open to hearing about why Gmail/something else is better, but I feel mostly committed to Outlook because I like the desktop client a lot.

I use Outlook on a Windows 7 workstation and Google on multiple Android phones.

I use ... https://sourceforge.net/projects/googlesyncmod/?source=typ_redirect ... on Windows 7 to constantly sync Outlook with Google.
I use the built-in Android capabilities to sync each phone with Google.

A change in contacts or schedule on any phone or the workstation is reflected on all the others. The sync is not instantaneous.
