Using Update.zip Files - Questions

I'm fairly new to Android, and I didn't see this answered anywhere else. So I thought I would ask here.

I have Clockworkmod Recovery on my Captivate with Rom Manager. My understanding of how this works(and how it's worked when I've tried it), is that you go into recovery mode on your phone, click on "reinstall packages," then it takes you to clockwork mod recovery to restore a nandroid backup. However, this seems to be contingent on having the clockworkmod update.zip file on your system.

My question then is:

1)Isn't it dangerous to use update.zip files to do things like change your battery icon(because you are temporarily replacing your ability to restore your phone(at a point when you'd be most likely to need this ability)?

2)If this is not true, what is the workaround to do this safely, without removing your ability to restore?


ps- I'm not sure if it's just how the Galaxy S phones work, but you have to reinstall packages from the stock recovery each time in order to get to the clockworkmod recovery. Again, if I'm doing something wrong, please let me know.
 
I bricked my first captivate like this. I used an update.zip lag fix and had to restart after a freezeup and it then failed to boot. I tried to reinstall packages, which should take me to the clockworkmod recovery, unfortunately I had changed the update.zip file to the lag fix one, so naturally it didn't work. Very frustrating, but I figured there had to be some sort of work around to this situation?
