You should be able to. Yes. You just can't downgrade to anything under 4.1.2

Some clarification here, as far as I understand it. Any ROM should be possible, but do not flash a stock .tar file with previous bootloaders. The bootloaders are the key, and Knox will step in and brick your phone in those instances.
