Wanting to install official firmware over carrier

Hello. I have an S6 with a company in Alaska called GCI. They remove the system update ability on all their phones with one that never actually receives updates but other than that they always seem stock through and through. Only Samsung apps bloat the phones and not any special carrier apps. My question is, if I flashed the latest official Samsung firmware directly over GCI's 5.0.2 will it most likely function properly or will it probably brick unless I wipe it first? I don't want to lose my data and haven't rooted because this phone has no sd slot. Any suggestions? Thanks.

I seriously never got a response? Great community. I figured many people out there have had this issue.

I suspect that Alaska has a very low count of members on this forum, and of those, no one else has an S6 on your carrier and wants to fool with it.
