My son has been having a problem with his Galaxy Apollo since he put Gingerbread on it. When he locks the screen, the camera sounds and a picture file is saved containing whatever happens to be on the screen at the time.
Gingerbread enabled some unrooted phones to be able to take screen shots, but I am not sure of the settings to enable or disable the feature. You could look in menu>settings>applications>manage applications to see if there is a screen capture app running that remaps the power button to include a screen shot when pressed.
