What does a factory reset actually delete?

Hi - i want to remove a gmail account from a samsung galaxy ace. I read the only way to do this is by restoring the phone to factory defaults. Will this delete all my text messages?
 
yes, unfortunately. Texts are stored in the /data partition of the phone, and a factory reset delets /data, and /cache sections. /system is left intact however. Really, all it does is delete and restore ALL apps to how they were when you got the phone, but by deleting the sections mentioned above.
