It can be turned off by simply not configuring an account for it.

The problem is that I never did set up an account (or at least I don't think I did), but I keep getting the message 'Unable to sync with the server.'

No, it doesn't. It is in color.

In that case, there's your answer - at some point in time it must have been configured (albeit incomplete). Disable the account and you should be good to go (I've not got my phone anywhere near me so I can't remember the exact steps to do so).

Here's a rather complete post on Disabling Backup Assistant. Although the poster states "Droid Incredible" I'd think it would apply to any VZW Android based phone (though I may be wrong on that!)
