Help What happens if I remove gmail email

Just purchased a Moto Z. In the new phone set up, I entered in my gmail account.

Then, when I added my Exchange work email, it lumped it in with my gmail email app. Gmail is listed as the default email. Because it is the "default", the Gmail calendar is default and it calls the Gmail "Primary". This is a problem. I need default to be my Exchange email.

Can I just delete the Gmail email?

When I touch selections to remove Gmail from the phone, it gives me warnings about removing email, contacts and "other data". It is the "other data" I'm worried about. Will removing Gmail screw up my other apps, Android Pay and other things?
 
Removing your Google account will mess those things up. The GMail app itself isn't essential - I don't have it installed on any of my devices. But if you are unsure, why not just set up your exchange email on a different email app (there are plenty to choose from) and use that instead (even disabling the GMail app if you don't need it)?

As for Calendars, any calendar app should let you choose which calendars to display and which is your default calendar for creating new events, so you can just change that in the calendar app. If the Google calendar app doesn't do that (I don't have that installed either so can't check) there are also many other calendar apps you can choose from.
