There are plenty of photo manager apps and hopefully others will comment on their preferences but I'd keep the Google Photos app installed simply for its automatic backup & sync function into your online Google account. Use a different app that has a user interface that's more appealing to view and manage your photo library, but give some thought to just leave Google Photos running in the background to ensure you're getting a current backup of your photos.
