What's for dinner ?

I'm having sandwiches on a hamburger bun to use them up. Beef bologna, cheese, fresh tomato, and mayo. Maybe some banana peppers if they are as tasty as they look. I'll have a garden fresh diced tomato and cottage cheese salad with my samich.
 
We had pizza, yeah we all watched our show together but orginally planned of going to my sister's yesterday but she has an ear ache as well as acid reflux..
Was too sleepy anyway.
 
A few weeks ago, I smoked two smallish brisket points. I bought the package thinking it was a large brisket point. We ate one of the briskets and I vac sealed the other. Tonight I warmed it up and we had smoked brisket and corn on the cob for dinner. Tomorrow's dinner will either be beef n noodles or beef fajitas.
 
I fixed beef n noodles for dinner last night. I must say that it tasted pretty darn good. Tonight beef fajitas are on the menu. The last of my smoked brisket point will be sliced up and cooked with a couple of packages of Kroger brand onions and peppers with some fajita seasoning. You might say I'm cheating using the frozen pepper blend but it's a great mix for many dishes... especially fajitas.
 
We decided that a sandwich would work as well as hotdogs, especially being as we had everything we needed. I had bologna and cheese and the wife hard salami and cheese. It was a super meal for the holiday. :) We later had some smoked cheese and crackers for desert.
 
Dinner ended up being grilled chicken thighs and early June peas. The thighs were boneless skinless and I seasoned them with a McCormick blend of garlic, onion, sea salt, and pepper. It's a nice blend that is perfect for grilled chicken. I'll likely turn the leftover grilled chicken thighs into a chicken salad for my dinner tomorrow. Tomorrow is one of the wife's low carb days so I get to do whatever I want. :)
 
The wife decided she would like some chicken salad so I saved the meal for tomorrow. Tonight she had her low carb meal and I had burritos and tacos from our local high octane Mexican fast food dive.
 
I just finished putting my chicken salad together. Nothing fancy, the seasoned and grilled chicken thighs diced, sweet pickles diced, and three boiled eggs diced. Just mayo with the salad today though I often add a little Italian dressing. I love celery in my chicken salad but was too frugal to purchase some knowing that I have to toss over a third of it away.
