I found that Go Launcher improved my smoothness the most. The default Gingerbread launcher was the worst.

Tried ADW launcher, LauncherPro and GoLauncher and GoLauncher works the bet for me. Always updated and fast/smooth.

I use to be a BIG fan of Launcher Pro but once the dev stopped the updates I had to try something else. Go Launcher is currently the fastest and most customizable launcher out there imo
