Why is it so hard to make a good martial arts game.

I would like to see more martial arts games that focus on character combat. Arcade fighting is fun. But id love to see a third person rpg style type fighting game

Kung Fu for NES still is #1 in my mind. so simple fun. games are so complex to show who has the most features blah blah... simple is fun!!
