There's an Xposed module called Youtube swipe to seek. Once installed, you can simply swipe left and right on top of a YouTube video to either fast-forward or rewind the current video you're watching.
I've seen this on various media players for Android in the Play Store, but this mode will let you do that on the stock YouTube application.
