Yes they can depending on the app and the permissions they want. You have to use your best judgment on a per app basis. Is the app highly rated? Read the user comments, are they negative? Has it been downloaded many times? Ultimately you just have to trust them. And try to avoid entering more personal data than you have to in your phone. Also most of the time you can't forbid any permissions. You have to allow them all or the app won't function.

I'm pretty sure that only keyboard applications can steal your key stroke information.
