Welcome! Forum search will do wonders for you but in a nutshell, it is called "Predictive Text" and you definitely want to shut it off if you're using the stock Samsung keyboard (because it couldn't predict even the past, let alone the future). If you go into Settings/Language and Input you'll see a little gear symbol beside the keyboard listed. Go into there and change the settings as you desire.
For a much better keyboard experience, you can load alternative keyboards from Google Play. Reading these forums the consensus seems to be the most popular are Swiftkey 3 or Swype Beta. Both of these actually have predictive text function that actually WORKS much of the time!
