Help Unlocked phone now rooted as well

I recently had my Orange Galaxy S2 unlocked by the local phone shop.
The unlocking worked fine, but I have now noticed that it has been rooted too.
It has a superuser app installed, which he said he didn't realise it had installed.
Not sure that I want it to be rooted when I sell it as it might put off potential buyers.
So I called the shop and asked if it has to be rooted to unlock it and he said that it does.
He said that the other way to unlocked it is to use a code but that system is currently down (the website that gives out codes) and it would cost £26 instead of the £10 that I paid to have it unlocked using root. I asked him if I could unroot it by flashing with the standard Orange firmware (using Keiss) and he said yes I could and that would unroot it. When asked that if this would then lock it again he said that no it shouldn't, but he didn't seem too sure about what he was saying.
So some specific questions:-
1) Did he have to root it to unlock it?
2) Did it have to be left in root?
3) Can I unroot it and return to standard firmware and it still remain unlocked?
4) If the answer to 3) is no, then can I delete / uninstall the superuser app?
5) When I run the superuser app, there is a temp unroot option. What does that do? Can I use that to unroot it?

In answer to your questions:-
1) No
2) No
3) As a rule it will remain unlocked
4) You can uninstall SU
5) As it says, it's a temporary root supposedly for apps that will not work on rooted phones, however, it rarely works.

I guess you are in the UK? Certain banking apps, Sky Go and a number of others don't work on rooted phones. For this reason, I am unrooted and would be annoyed if someone rooted my phone just for sim unlock

Yeah so am I.
I am not that confident in using odin and downloading roms (plus last time I looked I couldn't find a suitable unbranded ROM as it is an i9100P with the NFC chip). So can I just use Keiss and reflash the current latest firmware? I probably want to do that anyway as the S2 will be up for sale soon. But I don't want it to be loacked again as that will make it more difficult to sell.

The necessary for unlocking was because I needed a new sim card as I have bought an S5 and my S2 orange sim card did not fit the S5. Whilst getting a new sim card I thought that I might as well move from Orange to EE as they offered me a better plan. I was wanting to continue to use my S2 for a bit until I get the S5 setup as I like. But the S2 being locked refused to work with the EE sim card, hence the need to unlock. EE wanted £26 and to send it away to be unlocked hence the cheapo shop unlock. The S5 is already unlocked and not rooted so it won't be an issue with that.

I don't think Kies recognises a rooted device so I think you are stuck with Odin. Personally I'd look for the correct official rom for your device and get the guy who rooted it to flash it. Tell him some apps don't work so he shouldn't have rooted it. At least if it gets screwed up you are not left with the headache of fixing it.

I have plugged it into Keis and it still recognises it as a i9100P device, but I also get a message about it not being a Samsung device. I have not yet tried at re-install the latest Orange firmware as I do not want to risk locking the phone again as I am using it. When I get the S5 setup as I like, I will try the firmware re-install. I that fails, I will try to locate a standard Orange ROM and Odin it down to the device.
