Help Stopping some Google Apps

There are a lot of Google Apps on my android 4.4.2 phone that I do not use ... for example 'Books'. Which of the initially installed Google Apps can I safely stop so that they do not constantly update etc. All the Apps 'talk about' stopping them can cause problems in other Apps!

I've disabled a number of preinstalled apps and have had no issues. In the unlikely event of a problem you could always restore whichever causes issues.
 
If you only "Force Stop" them they will just restart again later or next time you reboot the phone.
As long as there is a "Turn Off" button for the app you can use that to disable it permanently. It's generally safe to do this for preinstalled apps where that button is provided or Google and the phone provider wouldn't have put it there.
If you want to disable apps that do not have the Turn Off option, the only way to do so is root the phone and use Titanium Backup or a similar app to freeze them. Just be sure that you only do this for apps that are safe to disable, do your homework first.
