Can't find the hidden menu icon

It says to hold down the icon in the left hand corner for a few seconds and the hidden menu icon should pop up but it doesn't. I'm trying to get to this to turn on the feature to turn over the device to stop any alert sounds.

I am unsure, precisely, which, "hidden menu", you are alluding to. There are a number of so called hidden menus on the S5. However, some of these have been disabled by carriers on their own branded models.
 
The feature worked on my last s5 & also my OK Google did too. I simply replaced my phone because it had some internal issues.
