Where do I find texts I saved to the CLIP TRAY?

Go to app where you want to past the text and do a looooong press button. You should see "paste" option

That only accesses the last item copied on my phone (HTC A9). What if I want a previous item?

If you don't get a Clip Tray option when you long press, your phone probably doesn't do that.
