How do I delete my Google account from my phone only?

I understand that the way to eliminate the FRP lock before giving away or selling a phone is to first delete the associated Google account from the phone. However, when I look at that option...

...it looks to me like I'm deleting my whole Google account, not just what's on this phone? Or is that what the option is saying, that I'm only deleting my Google account from this device?

I've bought, sold, given away and traded many phones in the past but this is the first time I've done so with one running Android 5.X with the FRP lock.

That looks like the wrong option, on stock Android the choice is Remove Account:

1. Open your device's Settings app.
2. Under "Personal," tap Accounts.
3. Tap the account you want to remove. If it's your Google Account, first tap Google.
4. Tap More (three dots) then Remove account.
5. If this is the only Google Account on the device, you'll need to enter your device's pattern, PIN, or password for security.

Do those steps work for you?

Yes, up to step 4. The only option under More is Sync now.

Ahhhh. In fact no, I didn't tap my gmail address. Yes, that gives me the option to remove account which I trust will remove it from my phone only. This certainly will make it easier than to try to bypass or unlock the FRP lock if I give it away or sell it.
