What is SenseUI and what is Android

I do not know what features / functions are basic 2.1 and what are part of the senseUI.

Android is a phone operating system, like Windows 7 on a computer. It's made by Google. HTC have taken the default look of Android and added their own 'skin' over the top, and called it the 'Sense UI'.
