Ive rooted an Ace and looking for a list of apps I can safely remove :) Anyone got one

I keep arranging my apps in folders so everything is organised but my phone keeps throwing apps out the folder. Basic terms, for instance I put all my Task apps i.e. Memo, Mini Diary etc into a folder called Memos and save the changes. These apps will stay in the folder fine until I open task...

Is 2.3.5 the latest update as I've seen a few S2's on 2.3.6 but when I check for an update my phone says fully-upto-date :confused:

Ive rooted my S2 and removed the apps I dont use but I was wondering can I flash my S2 with the standard S2 firmware instead of my Vodafone one. I did this one my X10 and received the update from SE when they released them. Was just wondering if I could do the same on my S2?????
