All i done was once i installed launcher pro was long press on the dock icons and got options like change icon etc. Hit change icon then select one from images (you need to download the icons you want first tho. Also when you long press you should be able to change the action of the icon if you want.

let me know if you still cant get this to work and ill try again to explain or make a vid for you

its Launcher pro that i used and i just changed the dock and icons. it can all be done in the launcher pro prefernces.
