How can I turn off the function that wants to rearrange all the items on the desktop when I pick up the phone? So stupid. Amazingly the back button nor standby mode will take the phone out of this function. Just in case this is not clear, to rearrange items on the desktop you touch and hold...

I am experimenting with what apps to turn off. So I go to: Menu>Settings>Running Services and then I turn off AT&T Hotspots as an example. How do you turn an app like this back on? I can't find a menu item for this anywhere!

I know to delete a single email: hold down on each email until the screen prompts for a new action. But how do you delete multiple emails all at once?
