    Firefox has its own sync system that works very well for me. For the databases or other files try Airdroid or a similar app. The devices must be on to sync up, they will not wake themselves.

    Photos sent via text (aka MMS) are reduced resolution to make a smaller file size and reduce data requirements. This is a general MMS system thing, not an Android thing. If you want to photos in the original quality, send/receive them by email or by cloud storage such as Google Drive or Dropbox.

    You must have deleted the account from the phone only. If you actually deleted the account you would not be able to login. As long as the account is active you will keep seeing email in the account online, even if not on the phone.

    If you saved your contacts to your Google account you can resync them and all will be good. If you did not save your contacts to your Google account or make a manual backup of contacts as a .vcf file then you are outta luck. Same with photos, documents, SMS, etc. No backups, no good...

    There's no list. AFAIK the only way to see default settings is go through the various settings and see. If you haven't changed a setting, then that's the default.

    They likely will not port your number unless you pay the ETF first. Also, they can disable your phone by blacklisting the phone's IMEI number, effectively making it a brick. You did a contract, now you gotta deal with it.

    You don't need to sign in separately. Just setup the accounts on the phone. Settings > Accounts > Google (or others, if used) > tap on the account to set > choose sync options as desired.
