Seriously, how long can I realistically expect to wait before the NC2 is fully rooted and as capable as my NC? What's the Dev interest in this device? That's a HUGE factor in my consideration to pick this up or not.

I requested it yesterday and it was added today. 
Yes, the hardware looks nice. I gave my NC to a relative, but my wife still has one. I intended to sell her's since we have HP Touchpads (CM7) now, but a used NC isn't worth much. Refurbs were $150 and may drop more with the new price structure so no reason to sell.
The dual core cpu and mic are nice additions.

So, really... What's the dev interest in this device? (Can you tell I'm anxious?)

Since the h/w is similar to the NC, I would think it's an easy port as soon as they discover the differences (like does Nooter work). I suspect the dual core cpu might need a driver, but until then, I bet one would work. The biggest problem is the devs need to have one to work on it. We ran into that with the HP Touchpad.
The problem is the Nook CM7 team has their hands full with the Touchpad and ICS will be dropping any day now and they've committed to that as well.
So it may get rooted pretty quick, but unless CM7 is an easy port, who knows.

I'm guessing that B&N won't even bother patching the holes since the rootability drove quite a few sales for the NC. Right now, they have a product that works as advertised (good for non-tech-heads) that also appeals to the tech-heads and even tech reporters. That helps sales.
Amazon, on the other hand, is relying on people getting Amazon Prime to make money from the Fire. People won't do that if they can root it and get out of the Amazon ecosystem. So, I'd expect the Fire to be difficult to root.

I am pretty excited about the Nook Tablet. It has my basic requirements for a entry level Tab with a good price on it. I won't go for the Fire with only 8GB of storage and no expandable SD slot.

I'm interested in the better capability Nook tablet. I love the screen on the Nook and it's viewing angles.
The better processor, more internal memory are all bonuses but doesn't drive me to upgrade at this point since my original nook 'tablet' is still pretty capable.
In 6 months I'll likely be able to pickup a returned/refurbished Nook Tablet with a good price.
I'm more excited that my carrier is supposed to go LTE in 1Q of 2012 as well as bring in the Nexus Galaxy. My current phone is very capable as well but the lure of 'pure android' is enticing.
